wegner Posted November 24 Share Posted November 24 I am picking up a crown roast of pork (uncooked) which my better half will apply an herbed rub, bake and fill the middle with a delicious sausage stuffing. She also is making roasted butternut squash soup and sausage and ricotta filled stuffed shells. I will be making mushroom risotto. Also some appetizers and other veggies and potatoes to truly stuff ourselves before hitting the desserts. Hope all here enjoy a wonderful day with family and friends. Yep stovetop....let's me add some labor to the meal....plus I get to enjoy a beer while also not having to entertain my in laws. WhiteSox2023 Posted November 28 Share Posted November 28 (edited) I bought a 22 pound turkey from CostCo. I salt brined this b**** for 2 days. Now drying it out until I stuff it with fresh poultry seasoning, sliced apples, onions, and oranges. Going to dry rub the outside with butter, garlic, pepper, and a little brown sugar. Gonna cook it tomorrow morning on my outside propane grill. Should take around 4 to 5 hours at 325 degrees. Grandpa (my dad) makes fresh stuffing from bread, celery, egg, onion, seasoning, etc. and fresh cranberry sauce from frozen cranberries. He also makes fresh mashed potatoes, gravy, and an awesome veggie salad and Hawaiian salad. My 14 and 16 year old boys are going to eat so much they might puke. After the initial massive turkey I am cooking, my dad and I are doing a pork roast and a smaller turkey breast and more stuffing for the rest of the weekend! Not that we dislike 'em, but 'peace and quiet' sounds good sometimes. The best T-giving in Chicago IMO would be family there with plenty turkey, dressing (dressing is a southside word I believe, not stuffing), brown gravy, hot rolls, green bean casserole and whatever dessert you might want. ... I'm sure the most tolerable dinners would be those in which the guests drink a few beers.
