It makes sense in theory, but there are holes in it as well - some pitchers will pitch better against teams than others (ala sometimes teams hit finesse or power better), there will be different offenses, they will pitch in different ballparks, and there will be sample size issues as well.

 

I think the best way to try to control for this is to see how catchers call pitches (and subsequently how often and when they get shaken off). From there you can attempt to match pitcher to catcher with their strengths, but even that is going to be rather clunky.
